Seven plates on the table, one sambal in the middle: that was the rule in Kak Ros's house, and the name stuck when the neighbours started buying it by the jar.
The belacan is toasted over charcoal in the morning, before the heat, and pounded by hand with bird's-eye chillies and calamansi. No blender. The texture is the point.
Their batch day is Wednesday. We collect on Thursday and pack on Friday, so what you order this week was made this week.
