“Liberica is not elegant. It is strong, a bit wild, and very Johor.”
Pak Lan's father roasted liberica beans with butter and a little sugar in a drum his uncle welded in 1978. The drum still turns, now on a small motor instead of a hand crank.
Liberica grows tall and heavy in the Johor peat. The beans are big and uneven, so they roast slowly, 40 minutes, with butter added in the last ten. The result is the dark, smoky kopi of a Johor kopitiam.
Their batch day is Thursday. We collect on Thursday and pack on Friday, so what you order this week was made this week.
