“Gula melaka is sweet. Gula apong is sweet and salty, like the river.”
Gula apong comes from the sap of the nipah palm, which grows in the brackish rivers of Sarawak. The sap is tapped at dawn and must be cooked the same morning or it sours.
Eleven families tap the palms along the Sambir river. They cook the sap down for four hours until it sets into soft, smoky, slightly salty discs.
Their batch day is Friday. We collect on Thursday and pack on Friday, so what you order this week was made this week.
